library. 250 simple, nutritious recipes are presented in an easy to follow format. The author has carefully chosen the ingredients for flavor, nutrition, and ease of preparation, yielding some very appealing entrees. Recipes consist of five or less ingredients and although most are prepared quickly and simply, several with lengthier cooking times are included ôfor a sense of balance.ö Some of the enticing recipes are Tofu and Sweet Potato Curry, Roasted Red Pepper and Artichoke Pizza, Curried Red Lentil and Spinach Soup, Easy Vegetable Lasagna, Maple Baked Pears and Red Onion and Almond-Stuffed Winter Squash. Many of the recipes use dairy products, but there are equally as many that are vegan. Each recipe includes a breakdown of calories, total fat, protein, carbohydrates, cholesterol and sodium and is followed by suggested menu combinations for easy meal planning. Sprinkled throughout the chapters, the author gives helpful tips on buying and preparing ingredients. Some of the many highlighted items are buying fresh greens, cooking pasta, and preparing polenta. Also included are definitions of Asian noodles, brown rice varieties, tofu varieties and mushrooms. Anyone who uses the Vegetarian 5- Ingredient Gourmet will appreciate the simplicity of these preparations, but the varieties and good flavor will keep you coming back to this cookbook to try other recipes. Your repertoire of vegetarian entrees will grow in no time!
