Introduction;
kerala''s secret treasure tells about a secret coconut sweet. If we are in the right house in kerala at the right time we can taste this coconut sweet.
Mohan, the wonderful cook:
Once upon a time, there lived a famous cook called Mohan. He lived in the Backwaters in kerala where the Onam Boat Race is held. Mohan was an expert in stuffed coconut. One day Mohan explained this secret. Once a year, just after the paddy harvest, certain families parboil the rice in ancient stone vats. The grain boils for several hours. They use the extreme heat in the vats to cook a coconut sweet.
Preparation of stuffed coconut:
At first a good coconut is chosen. It should be neither nor mature. A top slice is cut. The sweet water is drained. The coconut is stuffed with flattened rice, jaggery, cardamom, cumin and butter. The lid is then replaced. The nut is then bound tightly with a cloth.
Heavenly sweetness:
The coconut is dropped into the vat where the rice is boiling. For a few hours the coconut is transformed into a heavenly sweetness. Then the coconut is taken out. The outer husk is loose and fibrous. It is removed. The hot white ball looks like a pearl. It is allowed to cool and served.
The author''s attempt:
When the author left Allepey he carried in his mind the wafts of cardamom, cumin and butter of the stuffed coconut. Back in Mumbai the author tried to make the stuffed coconut at a friend''s house. He used a pressure cooker instead of a stone vat. But all he got was a misshapen pulp and demolished coconut. Since then the author tried to know the truth about the coconut dish. But he could not.
Conclusion:
The stuffed coconut narrated by Mohan gives a delicious taste to our palate. We feel as if we have travelled across the Backwaters in kerala and tasted the sweet stuffed coconut prepared by Mohan, the wonderful cook.
