this is a simple recipe for making roast vegetables
you will need about 2-3 pounds of root vegetables like carrots sweetpotatoes
leek turnip zucchini squash onions
or any other vegetables you like the combination should be colorfull and can be eaten alone or accompany a main dish
preheat an oven to medium high heat 175-190c
in an oven safe dish arrange the vegetable after rising them in cold water'you can leave the skin of the potatoes it gives anice texture to the dish.
add some garlic unpeeled or better yet a hole bulb.
sprinle with alot of unfined salt freshly ground pepper
pour a nice amount of extra virgin olive oil,a small dash of balsamic vinegar ,mixed everything with your hands so the oil cover all the vegetables evenly.
rapp in aluminium foil or baking sheet,
bake for an hour ,remove the foil or sheet and continue to bake for about 15 minutes untill golden brown
