CALCIUM FORTIFICATION OF
MUCUNA BEAN

ABSTRACT
Soluble organic calcium
salts have been extracted from
FISH bones. The X-ray data analysis
showed the calcium salts were calcium oxalate, lactate and unknown organic calcium salt. Calcium total of the extract analyzed using Atomic Absorption Spectroscopy was 5.71 mg/g. Using dissolution test, the dissolution profile of the extracts had the maximum solubility of the organic calcium of 52.57% in water solution at 120 minutes, and 79.30% in synthetic intestinal solution at 60 minutes. These data showed that organic calcium salts extracted from fish bone have good absorption in the intestinal solution. The 5% of the extracted fish bone organic calcium salts have also been used in Mucuna pruriens bean tempe production in our laboratory for calcium fortification. Addition of the extracts resulted that the calcium concentration of the Mucuna tempe increased from 2.13 mg/g to 2.64 mg/g. Dissolution profile of maximum soluble calcium was 18.47% in water solution at 90
minutes and in the synthetic intestinal solution was 52.02% at 60 minutes. These data showed that the fish bone organic calcium salts of Mucuna tempe were absorbed well in the intestinal system. Protein and amino acid analysis of the calcium fortified Mucuna tempe have been compared to those of untreated calcium salts. The results showed that the calcium fortification does not alter the protein and amino acid contents.
