Shopska salad is a traditional Bulgarian cold salad. In each restaurant in Bulgaria you can notice that the first thing in the salad menu is Shopska salad. This is the Bulgarian most popular salad. It is named after the Shoppi - the natives of Sofia ( the capital of Bulgaria). This salad is perfect in the summer when all the ingredients are freshly picked from the garden, but it is tasty and easy to make the whole year riund. Although it is always possible to order a Shopska salad in a restaurant, it is much tastier if you prepare it yourself at home. It is refreshing, quick and easy salad and goes along with every meal.
Ingredients:
one chopped onion or green onion;
four medium size tomatoes;
one or two cucumbers;
one or two fresh green pepper;
Optional: olives
chopped parsley;
Grated white cheese to sprinkle the salad;
salt, vinegar and oil to taste
How to prepare: cut all the ingredients in slices or cubes. Season with salt, add the chopped parsley and the vinegar and the oil. Mix all this well. Sprinkle with white cheese. Serve with glass of traditional home made Bulgarian "rakia" - a strong grape or plum brandy. Enjoy.
