Banana-Pie Diamonds
Ingredients:

cup roasted
wheat powder
2 cups melted jaggery
1 cup milk cream
1 cup khoya -
mashed 1 cup ripened and mashed
Banana 1/4 cup grated
dry coconut
1/4 cup assorted dry fruits (Optional: fried in clarified butter)
1 cup milk
pinch of cardamom powder
pinch of salt
Apparatus:
1 deep bottom pan
1 shallow bottomed plate – rubbed with butter on the flat inside of the pan
Method:
In a pan
add the roasted wheat powder.
Add to it the melted jaggery and place the vessel on slow fire.
Once the wheat and the jaggery are mixed well, add the mashed banana and sit the
mixture; still on slow fire.
Note: When the room is filled with banana aroma, then proceed further. Generally this takes around 2-3 minutes.
Add khoya & milk and stir the mixture, till the mixture leaves the sides of the pan.
Add to the mixture the grated dry coconut and the dry fruits.
Add the cardamom powder to enhance the flavor of the mixture.
Add salt to taste.
Remove the vessel from the fire.
Pour the hot mixture in the shallow bottomed pan.
Spread the mixture with the help of a spoon or a spatula.
Cut the flattened mixture into crosses to form diamond shapes.
Cool the mixture either in the fridge or in room temperature.
Delicious Banana-Pie diamonds are ready to be served.
