casserole To make the perfect Spicy Root Lentil Casserole:
Fry up some onion and garlic for a few minutes, add some root veges, turn up the heat and cook until vegetables are golden brown. Stir in some vege stock (about 1 litre), bring to the boil, and add lentils. Cover and simmer 15 or 20 minutes, or until thickened. Then stir in some coriander, leave a bit to use as garnish then serve the whole lot up on a bit of brown rice. Delish!
