Mint Rice

Mint Rice / Pudina Rice

Mint / Pudina leaves are very good for health. For rice lovers, by adding a special spice to this will give a delicious taste - Mint Rice

Ingredients:
Basmati Rice - 2 cups
Cloves - 4 nos.
Cardamom - 2 nos.
Cinnamon stick - 2 small
Ginger/Garlic paste - 1 tea spoon
Mint leaves - 1 bunch, leaves extracted and cleaned
coriander leaves 1/2 bunch
tomattos - 2 nos.
Green chillies - 2 to 4 according to taste
peas - 1/2 cup
carrot - 1 nicely cubed into small pieces
salt - according to taste
oil/ghee - 1 table spoon or according to taste

Preparation:
Make a smooth paste of Mint leaves, coriander leaves and tomattos.
 Heat pressure cooker or thick bottomed vessel  and add oil/ghee, let it heat.
add cloves, cardamom, cinnamon stick, let them fry. now, add ginger/garlic paste, let it fry till raw smell goes off. now. add mint/coriander paste, fry for 3 to 4 minutes till raw smell goes. now add fresh vegetables, saute for 2 minutes. now add water (3 or 3 and 1/2 cups), bring it to boil, add salt and prewashed rice and cover it. if doing it on pressure cooker, let it whitle 3 times and off it. if cooking in a vessel, cover it and let it cook in low flame for 15 minutes.
Now, colourful greenish mint/pudina rice is ready to serve. serve with raitha of your choice.
