INGREDIENTS :- 10 Almonds,1 level teaspoon Cardamom powder, 1 level spoon Melon Seeds ( known as Kharbooza seed in North India ), half a teaspoon Poppy Seeds ( called khus - khus in the north ), a quarter cup milk, 1 pinch Pepper powder, 1 teaspoon Rose Essence, 1 level tablespoon Fennel seeds (called saunf ), 150 gms Sugar, 1 litre water.
Method :- Dissolve sugar in half a cup of water. Soak the other dry ingredients in 1 cup of water for 2 hrs. Grind the dry ingredients to a fine paste, do not throw away the water used for soaking. Add the water to the ground paste and pass it through a fine sieve,( using a muslin cloth will give excellent results ). Repeat this process 5 - 6 times using the water used for soaking ingredients, sugared water and any balance left. Extract all the finely ground paste. Add 1 teaspoon of rose essence and chill. Before serving add a few rose petals to the thandai. Serve in silver tumblers for a royal touch.
