Winter melon soup1 liter (4cups) chicken stock450g (1lb) winter melon, peeled and cubed1 tablespoon fish sauce1 teaspoon
salt1/4 teaspoon freshly ground black pepper1 spring onion (scallion) finely
chopped2 sprigs fresh
coriander (cilantro) roughly chopped. heat the stock in a large saucepan over medium heat. Add the winter melon,reduce the heat to medim-low and cook until soft, about 15 minutes.. add the fish sauce, salt and pepper.
