Hard boiled eggs salad
6 pieces leaf lettuce
6 hard boiled eggs, peeled and thinly sliced
2 shallots, thinly
sliced
20g (1/2 cup) roughly sliced chinese celery
45g (1/2 cup) fried shallots
2 tablespoons fried garlic
1 sprig fresh coriander (cilantro) roughly chopped
Dressing
2 tablespoons Thai chili paste
3 tablespoons fish sauce
3 tablespoons fresh lime juice
1/2 tablespoon sugar
1.Line a serving platter with the lettuce leaves Place the egg slices on the
leaves and sprinkle with the shallots, chinese celery, crispy shalots, crispy
garlic and fresh coriander.
2. Combine the dressing ingredients and pour over the salad just before
serving.
Serves 4 o 6
Preparation time: 20 mns
Cooking time: 5 mns
