MILK
is the lacteal secretion of the mammary glands of lactating animals. It is generally obtained from the cow or buffalo during the period following at least 72 hours after calving. Milk is a white opaque fluid in which fat is present as an emulsion, protein and some mineral matters in colloidal suspension and lactose with some minerals and soluble protein in true solution. Since the keeping quality of milk is poor, and its disposal in fluid form economically presents difficulties, milk surpluses are usually converted into milk products which can be stored over longer periods and transported to distant places for sale at convenience. Different products of milk are Condensed milk, Milk powder, Infant foods, Weaning food, Khoa,Ccream, Curd, Butter, Ghee, Ice cream, Milk shake, Lassi, Channa, Cheese etc.
