HOW TO COOK WITH WINE?

I would like to extend my knowledge to share it to all who wanted to know
how to cook with wine. Well, it is very important to know the different direction to cook so that everybody will satisfy.
HERE SOME GUIDELINES OR STEPS HOW TO COOK WITH WINE:

1. Wine is known to release flavors in food so use it to intensify and enhance the flavor of many dishes.
2. If you''re unsure about how much wine to use, start with very little and sample your dish as you cook. Add more wine as needed.
3. Boiling down wine concentrates the flavor, including acidity and sweetness. Be reminded though that the flavor of wine in cooking is derived from the nature of the wine and not the alcohol. Most of the alcohol evaporates and very little is left in the final completed dish.
4. Cook only with wine you would drink. For a start, use mainstream white or red wine until you get accustomed to using wine as an ingredient. Then you can experiment with Sauvignon Blanc as the white wine for sauteing, marinating and in sauces for seafood and chicken, and Cabernet Sauvignon or Chianti for meats and meat-based sauces.
5. Stay away from wines that are heavily-flavored with oak as thay tend to give off a bitter taste. Avoid cooking with wines that are extremely fruity, sour or unsavory as these flavors will be emphasized during cooking.
6. Don''t use wine labeled "cooking wine", since this description started in 18th century aristocratic kitchens where salt was added to the wine to discourage the cook from drinkingit. So most cooking wine still have salt and herbs that can affect the flavor of food adversely.
7. Use only wine whose bottle has just been opened. Wine that has sat too long in your ref has begun to oxidize and will give your food a vinegar-y flavor.
8. For meat dishes, heat (do not boil) the wine as cold wine tends to amke meat tough while warm wine helps tenderized it. Dry red wines have better chemistry with heavier red meats.
9. Serve the same wine with dinner that you cook with as they will balance each other.
10. Other good uses for wine in cooking:
Use it when the recipe calls for water. Stir into brown gravy for red meat. Mix with oil to
baste meat and poultry. As binding ingredient for sauces and stock.*
